Appenzeller cheese, with its rich history dating back over 700 years, hails from the picturesque mountain district of Appenzell in northeast Switzerland. This cheese, once a staple in fulfilling tax obligations, holds a prestigious AOC identity designation since 1981, a testament to its exceptional quality and authenticity. Revered globally, Appenzeller remains a sought-after delicacy. The cheese comes in three main varieties: “Classic” with a silver label, aged 3-4 months; “Surchoix” with a gold label, aged 4-6 months; and the rare “Extra” with a black label, aged 6 months or longer. A defining feature of Appenzeller is its unique brine curing process, which involves a secret blend of wine, spices, and herbal brine, imparting a distinctive spicy character that intensifies with age. Appenzeller Extra, a specialty comprising just 2.4% of total Appenzeller production. This full-fat, semi-hard cow’s milk cheese is meticulously selected and aged to perfection, reaching the market at the peak of its maturity. Cheese-making experts rigorously evaluate and choose the finest Appenzeller wheels to undergo an extended aging process in climate-controlled cellars at a precise 15 degrees Celsius. This rare cheese is highly esteemed by connoisseurs worldwide for its unparalleled, bold flavour profile.
